- ¼ cup, plus 1 ½ teaspoon salt (divided)
- 1 qt. milk
- 6 tablespoons butter (cut into pieces)
- 6 tablespoons all-purpose flour
- 1 lb. pasta (Penne, Cavatappi, Rotini, etc.)
- (2) 8oz packages extra-sharp cheddar cheese (shredded)
- ½ cup sweet onion (grated)
- 2 tablespoons lemon juice (fresh)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon hot sauce
- ½ teaspoon ground pepper
- 1 ½ cups panko
- 2 teaspoons olive oil
- (2) 7oz jars pimiento (diced and drained)
- (2) 2.52oz packages fully cooked bacon (diced)

- Preheat broiler with oven rack 8 to 9 inches from heat. Then, bring ¼ cup salt and 4qt water to a boil in a large covered Dutch oven over high heat.
- While the oven is preheating, microwave milk in a micro-safe 1-qt. glass measuring cup covered with plastic wrap at HIGH for 3 minutes. While the milk is heating, melt the butter in a 12-inch cast-iron skillet over medium heat. Then, reduce heat to medium-low; add flour, and cook, while whisking constantly for about 2 minutes. Gradually whisk in hot milk and increase the heat to medium-high and bring to a low boil, while whisking often.
- Add pasta to boiling water and cook for approximately 8 minutes. Meanwhile, continue to cook sauce (whisking often) for about 6 minutes. Remove from heat; whisk in cheese, onion, lemon juice, Worcestershire sauce, hot sauce, 1 ½ teaspoon salt, and ½ teaspoon pepper, and cover.
- Stir together panko and olive oil. Then, drain pasta and fold into the cheese sauce. Stir pimiento and bacon into the pasta mixture, and sprinkle with panko mixture.
- Broil 1 to 2 minutes (or until breadcrumbs are golden brown). Next, sprinkle with chives and serve immediately!
Pimento Cheese-Bacon Burger

- Then, grill with the cover on for about 4 to 5 minutes and each side (or until beef is no longer pink in the center). Serve on your homemade burger buns and top with pimiento cheese, bacon slices, lettuce, tomato slices, etc.!

- First of all, let the dough stand at room temperature for 15 minutes. Cut dough into 12 equal pieces and place them onto a lightly greased 15 x 10 – inch jelly-roll pan. Let rise in a warm place (85 degrees) for about 30 minutes (or until doubled in bulk).
- Shape each dough portion into a 5-inch circle, and place on a lightly greased jelly-roll pan. Whisk together egg and 2 tablespoons water. Brush dough lightly with egg mixture; sprinkle with sesame seeds.
- Let rise in a warm place (85 degrees) for about 1 hour (or until doubled in bulk).
- Preheat oven to 400 degrees and bake rolls for about 20 to 22 minutes (or until browned). Let stand for 15 minutes and cut rolls in half crosswise and toast.

- 1 dozen Hawaiian dinner rolls
- ½ lb. deli ham (very thinly sliced)
