Camping Oatmeal Recipe (4 Servings)

Breakfast is the most important meal of the day! Start it off with this quick energy-filled oatmeal breakfast recipe by A Side of Sweet!

Ingredients

  • 4 c. oatmeal
  • 1/4 c. brown sugar
  • 1/4 c. slivered almonds or other nuts
  • 1/2 c. golden raisins or other dried fruit (prunes are great for digestion)
  • 1/2 tsp. cinnamon
  • Banana (optional)

Directions

  1. Mix all ingredients in a large plastic bag.
  2. To Eat – place mixture in a heatproof plastic bowl and cover with boiling water. Top with Banana. Easy as pie!

Camping Breakfast Burritos

The Taste and Tell blog has created this fantastic recipe to take on your next trip. You can modify this breakfast recipe easily to feed small or large groups and it takes under an hour from start to finish. Grab some great travel cooking utensils to make prep easy for this dish.

Ingredients

  • 1/2 tablespoon olive oil
  • 1 cup frozen hash browns
  • 8 oz cooked ham, diced
  • 12 eggs
  • 1 tablespoon Old El Paso Taco Seasoning
  • 1 (4.5 oz) can Old El Paso Green Chiles
  • 2 cups (8 oz) shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 8 (12-inch) Old El Paso flour tortillas

Instructions

  1. Heat the olive oil in a large skillet. Add the hash browns and cook for 1 minute, stirring continuously. Add in the ham. Continue to cook, stirring occasionally, until the hash browns and ham have both browned, about 8-10 minutes.
  2. Meanwhile, in a large bowl, lightly whisk the eggs. Whisk in the taco seasoning. When the hash browns and ham have browned, pour the eggs into the skillet. Cook, stirring frequently, until the eggs have set. Stir in the green chiles, cheese and cilantro.
  3. Warm the tortillas. Put 1/8 of the egg mixture down the center of each tortilla. Roll up like a burrito and wrap tightly in foil. Store in a ziptop bag in the refrigerator or in a cooler.
  4. When ready to cook, place wrapped burritos in hot coals next to fire. Let the burritos sit in the coals, turning once, until heated through, about 10-15 minutes. (The time will depend on how hot your fire is.)

Avocado Toast Breakfast Sandwich (1 Serving)

This camping breakfast recipe by Fresh Off The Grid is a tasty way to start your morning.

Ingredients

  • 2 slices of bacon, cut in half
  • 2 slices bread
  • 1 egg
  • 1 avocado
  • Salt + pepper
  • Optional: a pinch of ‘Everything But the Bagel’ seasoning from Trader Joe’s

Instructions

  1. Set a cast-iron skillet over your campfire or camp stove. Place the bacon in the skillet and cook over medium-low heat, flipping occasionally, until crispy. Remove and place on a paper towel-lined plate.
  2. Toast/fry the bread in the skillet, flipping after about a minute so that both sides are browned. Remove and set aside.
  3. If needed, add a bit more fat to the skillet. Crack an egg into the skillet and cook to your liking.
  4. To assemble the sandwich, slice the avocado in half, scoop out the middle, and mash it on both slices of bread. Layer the bacon on one side, the egg on the other, and season with salt & pepper.

Campfire Skillet Breakfast (2 Servings)

If you are looking for a hardy breakfast option to get the day started, this dish by Real Life With Dad is a wonderful option. This 5-star dish takes less than half an hour to complete from start to finish and is sure to become a favorite! Grab your Duluth Pack Apron and a cutting board to cook up this delicious dish!

Ingredients

  • 3 tbsp olive oil
  • 1 medium Onion, chopped
  • 2 Russet Potatoes, cubed
  • 1/2 cup sweet peppers, diced
  • 2 cups cooked ham, cubed
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Make a fire, and set up a cooking surface over it. I usually grab some rocks and pile them until a charcoal grill grate can rest on the surface above the flames.
  2. Heat a medium skillet over the fire.
  3. When hot, add 1 tbsp of olive oil to the skillet and quickly sauté onions, just so that they start to change color.
  4. Add potatoes and cook until they begin to get soft, 8-10 minutes.
  5. Add pepper and ham, and cook 5 minutes longer.
  6. Crack eggs into the skillet (right over the top of everything), cover, and cook until whites are set, 3-5 minutes
  7. Serve hot.

Perfect French Toast (4 Servings)

Create some delicious french toast with this great recipe from Fresh Off The Grid. Top your French toast with raspberries or other fresh fruit to add a sweet flavor profile to your dish!

Equipment

  • Nonstick Skillet
  • Silicone Spatula
  • Camp Stove

Ingredients

  • ½ lb loaf bread
  • 3 eggs
  • 1 cup milk
  • 2 tablespoons sugar, plus more for sprinkling
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract, optional
  • ¼ teaspoon nutmeg, optional
  • 4 tablespoons butter for pan
  • Maple syrup & berries to top

Instructions

  1. Cut the bread into 3/4″ – 1” thick slices.
  2. Beat the eggs first in a bowl large enough to accommodate a slice of the bread. Then add milk, cinnamon, nutmeg, vanilla, and sugar together, until thoroughly mixed.
  3. Heat 4 tablespoons of butter in a skillet over medium heat.
  4. Dip a slice of bread in the egg and milk mixture and let it soak for about 10 seconds on each side. Let the excess drip off, sprinkle each side with additional sugar, and then fry it in the skillet until golden and crispy on each side, about 3 minutes per side.
  5. Repeat with the rest of the bread, adding more butter to the skillet as needed.
  6. Serve with maple syrup, fresh fruit, and a cup of hot coffee. Enjoy!
